I made this tonight and it was honestly one of the best things I’ve ever eaten! Also, I inverted the water and coconut milk… maybe a little extra coconut milk. Had to tweak it a little based on what we had.

Nice flavour and a great way to use up my coconut milk. This was absolutely amazing! I would definitely recommend this for entertaining or a family meal. The kind I have eaten has been made with breasts, thank goodness… I just can't seem to like thighs. They are naturally softer so I am assuming that helps.

Suzan. My family LOVES this meal, but when it’s a weeknight and I’m home late from work, I’ve now made it using every shortcut I could think of and it’s still fantastic. Flavors were delicious though. Cook or reheat the brown rice before you start making the stir-fry, and be sure to have all the ingredients prepped and ready near the stove—once you start cooking, the whole meal is ready fast. I made this and I wasn’t a huge fan. But with a growing daughter I want to expose her to different dishes.

do i put everything 1 through 4 into the instant pot and cook then add potatoes? If you’re using cooked meat, you only need to cook the curry dish until it’s heated through. Currently waiting over 20 min for the potatoes to soften… meanwhile the sauce is basically gone. This is amazing. Add onion and garlic and sauté 1 minute. I didn't have cilantro, but it was still great.

The leftovers were even better the next day! I don’t know what it is about this one, but we come back to it over and over again. I added a squeeze of fresh lemon juice and then it was perfect. Chunks of potato, lean chicken and loads of veggies make it a meal in a bowl. Serve it with brown rice seasoned with curry powder. Making this tonight. I like that the curry is light and tasty.

I’m fairly new to Instant Pot and googled for advice. Also, water and oil don’t mix and coconut milk is sort of oily. Very good recipe! I used a "mild curry" as that's all I had plus I just used regular cumin as I didn't have any "roasted." This recipe offers us a decent portion packed with flavor but doesnt put us over on calories! I added a few cups of spinach. Cook on high for 4 hours, or on low for 8 hours. Cook for another few minutes if the sauce is too thin, then stir through the spinach until wilted. We had it over jasmine rice, and it was fabulous! I did not have the garam marsala, but i had everything else and the recipe turned out fabulous. Not that many ingredients and fast to cook. Skip.
