This looks great! I was wondering though what could I replace the potato starch with? Hi there if I wanted to leave out the alcohol would I need to replace this with something else or just omit ?

It is soooo good. I have successfully made it with both canola oil and extra virgin olive oil but any vegetable oil should work fine. We’re so glad it turned out well! Each one is about 1” high once baked. The batter is going to be pretty thick and sticky and that’s what you’re looking for. I still want it to be gluten free but it has been impossible for me to find potato starch anywhere…. Not sure how it may have changed the taste, but my cake was not faulted at all because of it. But we think beetroot powder might make it too bitter.

Perhaps! I made the flour from scratch as well and everything came out perfect! Yay! I used more applesauce in place of the bananas just because that was on hand. Do you think it would work to make it, freeze it, and then defrost for Christmas morning? Can tapioca starch be used in place of potato starch? Made with vanilla bean coconut ice cream, cocoa powder, and strong brewed coffee.

Hi Tara, we haven’t tried it with oat flour, but it looks like another reader did so with success. I was thinking of using the raw almonds I have (not blanched) and making them as fine as possible in a food processor…….. Just curious!

The butter should be dispersed throughout with big chunks, little chunks, and some leftover granules.

In large mixing bowl, whisk together flour, sugar, baking powder, baking soda and salt.

I may add extra chocolate chips next time just for fun. Dessert.
★☆. I have made this twice for my kids birthdays and it’s been a huge hit. Make it paleo by swapping peanuts with almonds! I think espresso instead of kahlua would work great in the frosting.

Yeah that should work! typically 1/2 to 1 tsp per cup of GF flour. We’re so glad it turned out well!
